With a population of 586 people recorded in the 2021 Census, the village sits in the fertile irrigated agricultural lands that made this part of the Murrumbidgee Irrigation Area famous. Bilbul is home to the head office of De Bortoli Wines, one of Australia's most celebrated family wine producers, and also hosts the William Bull Brewery, named after the early landowner after whom the village itself is named. The village was gazetted and a post office established in 1922.
